Chia Pudding

Chia seeds are one of the most nutrient-dense foods available! Rich in omega-3 fatty acids (they contain even more omega-3 fats than flaxseeds!), fiber, antioxidants, iron, and calcium, chia seeds are a wonderfully healthy and functional addition to a health-promoting diet. And here is an easy, delicious way to incorporate them…with only THREE ingredients (plus one optional and one garnish) and only a quick minute to prep! Try this recipe and please let me and Chef AJ know how you like it and/or how you use chia seeds in your diet!

2 cups unsweetened almond milk
4 ripe bananas
4 Tablespoons chia seeds
1 Tablespoon alcohol-free vanilla extract (optional)
4 strawberries

Place unsweetened almond milk, ripe bananas, chia seeds and alcohol-free vanilla (optional) into a blender and mix. Plate into bowls or glasses. Place in refrigerator to set (3-4 hours). Top with strawberries.
